Before you run out the door this morning, make a quick power lunch to get you through your busy day! This quinoa bowl is full of protein, vegetables and flavor that will keep you satisfied well beyond that 3 p.m. lull. This recipe takes less than 10 minutes and can be made ahead of time in different variations to last you for the entire work week.
- 1 cup of cooked quinoa
- 4 oz. of grilled chicken
- 2 tbsp of barbecue sauce
- 1/4 cup of cherry tomatoes
- 1/2 cup of mixed greens
- 1/2 lime
- 1 tbsp of fresh chives
- 1/2 of an avocado
- 1 tbsp of honey balsamic dressing
- Add your quinoa to a large mixing bowl and squeeze in fresh lime juice
- Lightly mix in chicken, tomatoes, greens, chives and avocado
- Drizzle honey balsamic dressing on top and garnish with with lime zest
