Ceviche is a light and tasty Latin American dish that is usually made with raw seafood which is cured in lemon and lime juices.  However, citrus juices do not kill bacteria in the meat.  I’ve created an easy Ceviche recipe that contains cooked shrimp.  This recipe will remind you of summertime and is great for entertaining guests. Serve with tortilla chips.

Ceviche Ingredients:

  • 1 pound cooked shrimp
  • 1 coconut broken in half
  • 1 teaspoon minced garlic
  • 1 avocado chopped
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup lime juice
  • 1/4 cup cilantro
  • Salt
  • Pepper


  1. Soak cooked shrimp in lime juice for approximately one hour
  2. Combine shrimp with garlic, avocado, tomatoes, red onion, green bell pepper, and cilantro
  3. Season mixture with salt and pepper to taste and divide amongst coconut halves
  4. Garnish with lime wedges if desired and serve with tortilla chips
