Before you run out the door this morning, make a quick power lunch to get you through your busy day! This quinoa bowl is full of protein, vegetables and flavor that will keep you satisfied well beyond that 3 p.m. lull. This recipe takes less than 10 minutes and can be made ahead of time in different variations to last you for the entire work week.


  • 1 cup of cooked quinoa
  • 4 oz. of grilled chicken
  • 2 tbsp of barbecue sauce
  • 1/4 cup of cherry tomatoes
  • 1/2 cup of mixed greens
  • 1/2 lime
  • 1 tbsp of fresh chives
  • 1/2 of an avocado
  • 1 tbsp of honey balsamic dressing


  1. Add your quinoa to a large mixing bowl and squeeze in fresh lime juice
  2. Lightly mix in chicken, tomatoes, greens, chives and avocado
  3. Drizzle honey balsamic dressing on top and garnish with with lime zest
